Pasta with pumpkin cream recipe – Ricetta Pasta con Crema di Zucca

A little gift from my mum during the Christmas holidays: a delicious traditional recipe.


ENGLISH SPEAKERS:

Cut half pumpkin in small pieces;

Cook it in a saucepan with onion, butter and black pepper;

Add vegetable stock (for half pumpkin, use max half litre of stock)

Cook for 20 min;

Put the mixture together with a pack of creme fraiche – and red chili flakes if you like – in a blender;

Blend for a minute until it becomes a soft cream;

Add the pumpkin cream to the pasta – cooked al dente and drained – (preferably ravioli)

Add some grated Parmesan or Grana Padano and serve .

RICETTA IN ITALIANO:

Tagliare mezza zucca a quadretti;

Rosolare la zucca in padella con cipolla, burro e pepe ;

Aggiungere del brodo vegetale (per mezzo kg di zucca utilizzare max mezzo Litro di brodo)

Cuocere per 20 min;

Frullare il tutto con 1 confezione di panna e peperoncino se vi piace;

Aggiungere la crema ottenuta alla pasta appena cotta al dente e scolata (preferibilmente ravioli) e grattuggiarvi sopra grana o parmiggiano .
