Mushroom and asparagus risotto with apple vinegar and no butter…

Recipe inspired by Jamie Oliver‘s risotto, but modifying most of its ingredients.

Ingredients for seasoning the risotto during the cooking phase:

chilli flakes
sea salt
black pepper
ginger
rosemary
asparagus and mushrooms instead of onions, garlic and celery
apple vinegar instead of wine
olive oil – no butter
Parmesan to garnish

Ingredients for the stock:

veg stock cube
water
cardamom
salt
asparagus
