I followed the original recipe but without eggs and adding some Cadbury cocoa powder:
– 180 gr buckwheat flour
– 100 gr 00 flour
– 120 gr brown, muscovado or granulated sugar
– 125 gr butter
one large egg one banana
– 1 pinch of salt
50 gr chocolate drops 4 tbsp Cadbury cocoa powder or drinking chocolate powder
Mix all ingredients with your hands until the dough is formed (it should not be very smooth nor liquid: if you overmix the dough, the finished biscuits/cookies may be tough). Start with the 2 flours, then the butter, then all the remaining ingredients.
Cover the dough with cling film and let it rest in the fridge for 1 hour.
Grease a baking tray and prepare your biscuits.
Cook in a pre-heated oven at 180 degrees for 10 minutes.
